Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter (melted)
- 24 oz softened cream cheese
- 1 cup sour cream
- 1 cup pumpkin puree (not pumpkin pie filling)
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- Whipped cream (for topping)
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a springform pan to form the crust.
- Bake the crust for about 10 minutes until golden brown. Let it cool.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, pumpkin puree, vanilla extract, cinnamon, nutmeg, and eggs. Mix until just combined.
- Pour the filling over the cooled crust and bake at 325°F (160°C) for approximately 60 minutes or until set but slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for an hour to prevent cracks. Once cooled, refrigerate for at least four hours or overnight.
- Before serving, top with whipped cream and sprinkle with extra cinnamon or crushed Halloween candies.
