- 12 mini bell peppers
- 1/2 cup cream cheese, softened
- 1/4 cup shredded cheddar cheese
- 2 tbsp chopped green onions
- 1 tbsp fresh parsley, chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the mini peppers and remove the seeds.
- In a bowl, mix cream cheese, cheddar cheese, green onions, parsley, garlic powder, salt, and black pepper until smooth.
- Stuff each mini pepper with the cheese mixture.
- Place stuffed peppers on a baking sheet and drizzle with olive oil.
- Bake for 12-15 minutes, or until peppers are tender and cheese is slightly golden.
- Serve warm as an appetizer or snack.
Notes
- For added flavor, try adding crumbled bacon or cooked sausage to the cheese mixture.
- These stuffed mini peppers can also be made ahead of time and stored in the fridge for up to 24 hours before baking.
