  • 4 medium russet baking potatoes
  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh salsa
  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry the potatoes; prick several times with a fork.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. In a skillet over medium heat, cook ground beef or turkey until browned. Add taco seasoning and water; simmer for 5 minutes.
  4. Cut each baked potato lengthwise but do not cut all the way through. Fluff insides with a fork.
  5. Fill each potato with the meat mixture and black beans, top with shredded cheese, and return to the oven for another 10 minutes until cheese melts.
  6. Serve topped with salsa, sour cream, green onions, and cilantro.
