  • 1/2 cup coarse sea salt
  • 1/4 cup brown sugar
  • 2 tsp black pepper (freshly cracked)
  • 2 tsp garlic powder
  • 2 tbsp fresh thyme (or 1 tbsp dried)
  • 2 tbsp fresh rosemary (or 1 tbsp dried)

Instructions

  1. Thaw the turkey in the fridge if frozen for several days. Remove giblets and pat dry with paper towels.
  2. In a bowl, combine coarse sea salt, brown sugar, black pepper, garlic powder, thyme, and rosemary to create the dry brine mix.
  3. Rub the brine generously all over the turkey, including under the skin.
  4. Place the seasoned turkey on a rack in a roasting pan and refrigerate uncovered for 24-48 hours.
  5. Preheat your oven to 325°F (160°C).
  6. Roast the turkey until an internal temperature of 165°F (74°C) is reached at the thickest part of the thigh, approximately 13-15 minutes per pound.
