Instructions
- Preheat oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, half of the mozzarella, Parmesan, chopped basil, salt, and pepper until combined.
- Lay zucchini strips flat; place two tablespoons of filling at one end and roll tightly. Place seam side down in a baking dish.
- Pour marinara sauce over the rolls and sprinkle with remaining mozzarella.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown. Let cool slightly before serving.
