Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5 minutes on each side until golden brown. Remove from the pan.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add sliced mushrooms and cook for 5-7 minutes until they release their juices and become tender.
  5. Pour in heavy cream and chicken broth, scraping the bottom of the pan to incorporate all flavors. Stir well.
  6. Return the chicken to the skillet along with dried thyme. Let simmer for about 5 minutes until slightly thickened.
