Ingredients
  

Egg Filling
  • 8 large eggs beaten
  • 1 cup cheddar cheese shredded
  • 1 cup cooked sausage crumbled
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Burrito Assembly
  • 4 large flour tortillas
  • 1 cup sour cream for serving
  • 1 cup salsa for serving

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add crumbled sausage and cook until browned, about 5 minutes.
  3. Pour in the beaten eggs, salt, and pepper. Scramble until eggs are fully cooked. Stir in shredded cheese until melted.
Assemble the Burritos
  1. Warm the tortillas in a separate skillet or microwave until pliable.
  2. Spoon the egg filling onto the center of each tortilla.
  3. Fold in the sides and roll up tightly to form a burrito.
  4. Serve with sour cream and salsa on the side.
