Ingredients
  

Chicken
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
Vegetables
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1 cup green bell pepper, diced
  • 1 cup green onions, sliced
Dressing
  • 1/2 cup mayonnaise Use light mayonnaise for a healthier option.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground is preferred.

Method
 

Prepare the Ingredients
  1. In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, diced green bell pepper, and sliced green onions.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the chicken and vegetable mixture. Toss gently until everything is well coated.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
