Ingredients
  

Chicken
  • 2 cups cooked chicken, shredded Use rotisserie or grilled chicken for convenience.
Vegetables
  • 1 cup celery, diced
  • 1 cup red bell pepper, diced
  • 1 cup green onions, sliced
  • 1 cup cherry tomatoes, halved
Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground is preferred.
Herbs
  • 1 tablespoon fresh parsley, chopped Optional for garnish.

Method
 

Prepare the Chicken
  1. If using raw chicken, grill or cook it in a skillet until fully cooked, then shred it into pieces.
Mix the Vegetables
  1. In a large mixing bowl, combine the diced celery, red bell pepper, green onions, and cherry tomatoes.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and black pepper until smooth.
Combine Ingredients
  1. Add the shredded chicken to the bowl with the vegetables, then pour the dressing over the top. Mix well to combine.
Serve
  1. Garnish with chopped parsley if desired, and serve chilled or at room temperature.
