Ingredients
  

Chicken
  • 2 cups cooked chicken breast shredded or diced
Vegetables
  • 1 cup celery diced
  • 1 cup red grapes halved
  • 1 cup green onions sliced
  • 1 cup mixed greens for serving
Dressing
  • 1/2 cup mayonnaise or Greek yogurt for a lighter version
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Chicken Salad
  1. In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, and sliced green onions.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss until everything is evenly coated.
  4. Serve the chicken salad over a bed of mixed greens.
