Chilaquiles verdes are a traditional Mexican breakfast dish made with tortilla chips smothered in a green salsa, topped with cheese, avocado, and crema.

Ingredients
  

For the green salsa
  • 6 tomatillos tomatillos, husked and rinsed
  • 2 jalapeños jalapeños, stemmed adjust for heat preference
  • 1 cup fresh cilantro packed
  • 1 clove garlic peeled
  • 1 teaspoon salt
  • 1 cup water for boiling
For the chilaquiles
  • 8 corn tortillas corn tortillas, cut into triangles
  • 1 cup vegetable oil for frying
  • 1 cup crumbled queso fresco
  • 1 avocado ripe avocado, sliced
  • 1 cup Mexican crema or sour cream
  • 1 teaspoon lime juice for garnish

Method
 

Prepare the green salsa
  1. In a saucepan, bring water to a boil and add tomatillos and jalapeños. Cook for about 10 minutes until soft.
  2. Transfer the cooked tomatillos and jalapeños to a blender. Add cilantro, garlic, and salt. Blend until smooth.
Fry the tortillas
  1. In a large skillet, heat vegetable oil over medium heat. Fry the tortilla triangles in batches until golden and crispy, about 2-3 minutes per side.
  2. Remove the fried tortillas and drain on paper towels. Season with salt.
Assemble the chilaquiles
  1. In the same skillet, reduce heat to low and add the green salsa. Stir in the fried tortillas until well coated.
  2. Serve immediately, topped with crumbled queso fresco, avocado slices, and a drizzle of crema. Garnish with lime juice.
