Ingredients
  

Meat
  • 1 lb ground beef can substitute with turkey or plant-based meat
Vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can kidney beans, drained and rinsed 15 oz
  • 1 can black beans, drained and rinsed 15 oz
  • 1 cup bell pepper, chopped any color
Spices
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper optional for heat
Liquids
  • 1 cup beef broth or vegetable broth

Method
 

Cooking the Chili
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the chili powder, cumin, paprika, salt, black pepper, and cayenne pepper. Cook for another 2 minutes to toast the spices.
  4. Add the diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Serve hot.
