Ingredients
  

Fritter Mixture
  • 2 cups fresh corn kernels can use canned or frozen
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 cup milk or buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional
  • 1 tablespoon chopped green onions optional
For Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Fritter Mixture
  1. In a mixing bowl, combine the corn kernels, flour, beaten egg, milk, baking powder, salt, and pepper. Mix until just combined. Stir in parsley and green onions if using.
Fry the Fritters
  1. Heat the vegetable oil in a frying pan over medium heat. Once hot, drop spoonfuls of the fritter mixture into the oil, flattening them slightly.
  2. Cook for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Serve
  1. Serve warm with your favorite dipping sauce or enjoy plain.
