Chicken
  • 4 pieces chicken thighs bone-in, skin-on
Seasoning
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked or sweet
  • 1 teaspoon dried thyme
Vegetables
  • 2 cups carrots sliced
  • 2 cups potatoes cubed
  • 1 cup onion sliced

Method
 

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and thyme.
  3. Rub the mixture all over the chicken thighs, ensuring they are well coated.
  4. Place the chicken thighs in a baking dish, skin side up.
  5. Arrange the sliced carrots, cubed potatoes, and sliced onions around the chicken in the baking dish.
Cooking
  1. Bake in the preheated oven for 45 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).
  2. For extra crispiness, broil for an additional 5 minutes if desired.
  3. Remove from the oven and let rest for 5 minutes before serving.
