- Rinse the quinoa under cold water. This step is crucial to removing any bitterness. Use a fine mesh strainer and give it a good swirl for about 30 seconds.
- Combine the quinoa and vegetable broth in a pot. Bring everything to a boil over medium-high heat. Once it’s bubbling, reduce the heat to low and cover. Let it simmer for about 15 minutes, or until the quinoa is fluffy and the broth is completely absorbed.
- Mix the cooked quinoa in a large bowl with black beans, corn, diced red bell pepper, and diced avocado. Squeeze the lime juice over everything, then sprinkle with salt and pepper. Mix gently to combine, letting the flavors meld together.
- Garnish with chopped cilantro just before serving. This fresh herb adds a lovely touch and enhances those vibrant flavors.
