Method
Prepare the Chicken
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and garlic powder.
- Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
Make the Sauce
- In the same skillet, pour in the French onion soup and bring to a simmer.
- Return the chicken to the skillet, spooning some of the soup over the top. Sprinkle the shredded Swiss cheese on top of the chicken.
- Cover and let simmer on low heat for about 10-15 minutes until the cheese is melted.
Cook the Rice
- While the chicken is simmering, rinse the rice under cold water until the water runs clear.
- In a pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
Serve
- Fluff the rice with a fork and serve on plates. Top with the French onion chicken and sauce.
- Garnish with fresh parsley if desired and enjoy!
