french onion chicken and rice

Ingredients
  

Chicken and Sauce
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups French onion soup canned or homemade
  • 1 cup shredded Swiss cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Rice
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water

Method
 

Prepare the Chicken
  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and garlic powder.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
Make the Sauce
  1. In the same skillet, pour in the French onion soup and bring to a simmer.
  2. Return the chicken to the skillet, spooning some of the soup over the top. Sprinkle the shredded Swiss cheese on top of the chicken.
  3. Cover and let simmer on low heat for about 10-15 minutes until the cheese is melted.
Cook the Rice
  1. While the chicken is simmering, rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
Serve
  1. Fluff the rice with a fork and serve on plates. Top with the French onion chicken and sauce.
  2. Garnish with fresh parsley if desired and enjoy!

Notes

For added flavor, you can sauté some sliced onions in the skillet before adding the chicken.
