Ingredients
  

Shrimp Marinade
  • 1 pound large shrimp peeled and deveined
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon fresh parsley chopped
For Grilling
  • 1 lemon sliced for garnish
  • 1 tablespoon olive oil for brushing the grill

Method
 

Marinate the Shrimp
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, black pepper, and parsley. Add the shrimp and toss to coat evenly. Cover and marinate in the refrigerator for 15 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
Grill the Shrimp
  1. Preheat the grill to medium-high heat. Brush the grill grates with olive oil. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
Serve
  1. Remove the skewers from the grill and serve immediately with lemon slices on the side.
