Ingredients

Chicken
  • 1 pound boneless, skinless chicken thighs or chicken breasts
Hot Honey Sauce
  • 1 cup honey preferably local
  • 2 tablespoons hot sauce such as Frank's RedHot
  • 1 teaspoon red pepper flakes optional for extra heat
Sliders
  • 8 mini slider buns or Hawaiian rolls
  • 4 slices cheddar cheese optional
  • 1 cup coleslaw for topping
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method

Prepare the Chicken
  1. Preheat the grill to medium-high heat. In a mixing bowl, combine garlic powder, onion powder, paprika, salt, and black pepper. Rub the seasoning mixture all over the chicken thighs.
  2. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Make the Hot Honey Sauce
  1. In a small saucepan over low heat, combine honey, hot sauce, and red pepper flakes. Stir until well mixed and heated through, about 3-5 minutes.
Assemble the Sliders
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken into smaller pieces.
  2. Drizzle the hot honey sauce over the chicken pieces.
  3. Place the chicken on the slider buns, top with cheddar cheese if using, and add a spoonful of coleslaw. Close the sliders and serve warm.
