Prepare the Chicken
- Preheat the grill to medium-high heat. In a mixing bowl, combine garlic powder, onion powder, paprika, salt, and black pepper. Rub the seasoning mixture all over the chicken thighs.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Make the Hot Honey Sauce
- In a small saucepan over low heat, combine honey, hot sauce, and red pepper flakes. Stir until well mixed and heated through, about 3-5 minutes.
Assemble the Sliders
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken into smaller pieces.
- Drizzle the hot honey sauce over the chicken pieces.
- Place the chicken on the slider buns, top with cheddar cheese if using, and add a spoonful of coleslaw. Close the sliders and serve warm.
