How to Make Homemade Samoas Cookies
  1. Preheat your oven to 350°F (175°C) so it’s ready when you are!
  2. Cream together the softened butter and granulated sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
  3. Mix the flour, cornstarch, baking powder, salt, and vanilla extract into the butter mixture. Combine until just mixed together.
  4. Press the dough into a greased baking pan, spreading it evenly.
  5. Bake the cookies for 15 minutes or until lightly golden on the edges.
  6. Combine caramel candies and heavy cream in a saucepan over low heat, stirring continuously until melted and smooth, about 5-7 minutes.
  7. Stir the shredded toasted coconut into the caramel mixture until well combined.
  8. Spread the coconut-caramel mixture evenly over the baked cookies.
  9. Melt the semisweet chocolate chips until smooth and drizzle generously over the cookies.
  10. Cool the cookies completely on a wire rack.
