- Preheat the oven to 375°F (190°C) to ensure even cooking of the enchiladas and a bubbly cheese topping.
- Fill each corn tortilla with a generous amount of shredded birria beef and shredded cheese, then roll them up tightly.
- Arrange the rolled tortillas seam-side down in a baking dish and pour the birria consommé over the top.
- Bake in the preheated oven for 25 minutes until cheese is melted and bubbly.
- Serve hot with chopped onion, fresh cilantro, a dollop of sour cream, and lime wedges.
