Instructions
  1. Preheat the oven according to the puff pastry package instructions. Set it to a warm 400°F (200°C) so it's ready to create that golden-brown finish.
  2. Sauté shallots in olive oil over medium heat until translucent. Stir gently, letting their natural sweetness bloom, which takes about 3-4 minutes.
  3. Add the sliced mushrooms to the skillet and cook until tender and browned, about 5-7 minutes. They should be juicy and aromatic, filling your kitchen with savory goodness.
  4. Remove from heat, then stir in chopped herbs, salt, and pepper, adjusting seasoning to taste.
  5. Roll out the puff pastry on a lightly floured surface, then cut into desired tart shapes.
  6. Transfer the pastry to a baking sheet lined with parchment paper and spoon the mushroom mixture generously onto each piece.
  7. Crumble the softened goat cheese on top of the filling.
  8. Brush the edges of the pastry with the egg wash to ensure they bake up beautifully golden.
  9. Bake in the preheated oven until the pastry is puffed and golden brown, which should take about 20 minutes.
