Ingredients
  

Pasta
  • 8 oz rotini pasta or any pasta of choice
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup black olives sliced
  • 1 cup red onion finely chopped
Dressing
  • 1 cup Italian dressing store-bought or homemade
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Cheese
  • 1 cup mozzarella cheese cubed or shredded

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, black olives, red onion, and mozzarella cheese.
Add Dressing
  1. In a separate bowl, whisk together the Italian dressing, dried oregano, salt, and black pepper. Pour over the pasta salad and toss to coat evenly.
Chill and Serve
  1. Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
