- Start by husking your fresh corn on the cob. Remove the green outer leaves and silky threads, revealing the plump, golden kernels. Rinse each ear under cool water.
- In a small mixing bowl, combine mayonnaise, lime juice, and salt. Whisk until smooth and creamy.
- Preheat your grill to medium-high heat (about 400°F/200°C). Place the corn directly onto the grill grates and grill for 10-15 minutes, turning occasionally until charred.
- Remove the corn from the grill and brush each ear generously with the prepared sauce. Sprinkle crumbled cotija cheese and chili powder over the top.
