Preparation
  1. Start by husking your fresh corn on the cob. Remove the green outer leaves and silky threads, revealing the plump, golden kernels. Rinse each ear under cool water.
  2. In a small mixing bowl, combine mayonnaise, lime juice, and salt. Whisk until smooth and creamy.
  3. Preheat your grill to medium-high heat (about 400°F/200°C). Place the corn directly onto the grill grates and grill for 10-15 minutes, turning occasionally until charred.
  4. Remove the corn from the grill and brush each ear generously with the prepared sauce. Sprinkle crumbled cotija cheese and chili powder over the top.
  5. Serve immediately while warm, squeezing additional lime juice over each ear.
