Preparation
  1. Gather all your ingredients and tools: fresh corn, mayonnaise, cotija cheese, lime juice, chili powder, and cilantro.
  2. Peel back the husks of the corn and remove the silk strands. Rinse each ear under cool water.
  3. Bring a large pot of water to a rolling boil. Add a pinch of salt, then drop in the corn cobs and simmer for 5-7 minutes until tender.
  4. Alternatively, preheat your grill to medium-high heat and grill the corn for 10-15 minutes, turning occasionally.
  5. Mix together mayonnaise, crumbled cotija cheese, lime juice, and chili powder in a small bowl until creamy.
  6. Coat the cooked corn with the topping and garnish with chopped cilantro, salt, and pepper.
