Dip Base
  • 2 cups sweet corn fresh or canned
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup mayonnaise
Seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1 cup crumbled cotija cheese
  • 1 tablespoon chopped fresh cilantro for garnish
  • 1 tablespoon sliced jalapeños optional

Method
 

Prepare the Dip
  1. In a mixing bowl, combine the sweet corn, cream cheese, sour cream, and mayonnaise. Mix until well combined.
  2. Add the chili powder, cumin, garlic powder, lime juice, salt, and black pepper. Stir until evenly distributed.
Cook the Corn
  1. Heat a skillet over medium heat. Add the corn mixture and cook for about 5-7 minutes, stirring occasionally, until heated through.
Serve
  1. Transfer the dip to a serving dish. Top with crumbled cotija cheese, chopped cilantro, and jalapeños if using.
  2. Serve warm with tortilla chips or fresh vegetables.
