oreo ice cream cake

Ingredients
  

For the crust
  • 24 pieces Oreo cookies crushed
  • 5 tablespoons unsalted butter melted
For the filling
  • 4 cups vanilla ice cream softened
  • 1 cup Oreo cookies chopped
  • 1 cup whipped cream for topping

Method
 

Prepare the crust
  1. In a mixing bowl, combine the crushed Oreo cookies and melted butter until well mixed.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
Make the filling
  1. In a large bowl, mix the softened vanilla ice cream with the chopped Oreo cookies until evenly distributed.
  2. Spread the ice cream mixture over the prepared crust, smoothing the top with a spatula.
Freeze the cake
  1. Cover the cake with plastic wrap and freeze for at least 4 hours, or until firm.
Serve
  1. Once frozen, remove the cake from the springform pan.
  2. Top with whipped cream and additional crushed Oreos if desired, then slice and serve.

Notes

For best results, allow the ice cream to soften slightly before mixing. You can also use chocolate ice cream for a different flavor.
