Prepare the Soup
- In a large pot, combine the ham bone, split peas, water, onion, celery, carrots, garlic, thyme, and black pepper.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and cover the pot. Simmer for about 1.5 to 2 hours, or until the peas are tender and the soup has thickened.
- Remove the ham bone and let it cool slightly. Strip any remaining meat from the bone and chop it into small pieces.
- Return the chopped ham to the soup and stir well. Season with salt to taste.
- Serve hot, garnished with fresh herbs if desired.
