Ingredients
  

Soup Base
  • 1 lb split green peas rinsed and drained
  • 1 large ham bone with some meat attached
  • 8 cups water
  • 1 medium onion chopped
  • 2 stalks celery chopped
  • 2 carrots carrots chopped
  • 2 cloves garlic minced
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste

Method
 

Prepare the Soup
  1. In a large pot, combine the ham bone, split peas, water, onion, celery, carrots, garlic, thyme, and black pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and cover the pot. Simmer for about 1.5 to 2 hours, or until the peas are tender and the soup has thickened.
  4. Remove the ham bone and let it cool slightly. Strip any remaining meat from the bone and chop it into small pieces.
  5. Return the chopped ham to the soup and stir well. Season with salt to taste.
  6. Serve hot, garnished with fresh herbs if desired.
