Ingredients
  

Topping
  • 1/4 cup Unsalted Butter melted
  • 1 cup Brown Sugar dark brown for richer flavor
  • 1 can Canned Pineapple Slices packed in juice
  • 1/2 cup Maraschino Cherries for decoration
Cake Batter
  • 1 cup Granulated Sugar
  • 1 cup All-Purpose Flour sifted
  • 1 teaspoon Baking Powder fresh
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract pure
  • 1/2 cup Milk whole or buttermilk
  • 1/4 cup Pineapple Juice reserved from canned pineapple

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Melt 1/4 cup of butter in a round cake pan over low heat or in the microwave.
  3. Sprinkle 1 cup of brown sugar evenly over the melted butter.
  4. Arrange pineapple rings on top of the sugary mixture and place maraschino cherries in between.
Making the Batter
  1. In a mixing bowl, combine granulated sugar, flour, baking powder, and salt.
  2. Add eggs, vanilla extract, milk, and reserved pineapple juice to the dry ingredients and mix until smooth.
  3. Pour the batter over the pineapple topping in the cake pan.
Baking
  1. Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool for a few minutes before inverting onto a serving plate.
