Preparation
- Preheat your oven to 350°F (175°C).
- Melt 1/4 cup of butter in a round cake pan over low heat or in the microwave.
- Sprinkle 1 cup of brown sugar evenly over the melted butter.
- Arrange pineapple rings on top of the sugary mixture and place maraschino cherries in between.
Making the Batter
- In a mixing bowl, combine granulated sugar, flour, baking powder, and salt.
- Add eggs, vanilla extract, milk, and reserved pineapple juice to the dry ingredients and mix until smooth.
- Pour the batter over the pineapple topping in the cake pan.
Baking
- Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for a few minutes before inverting onto a serving plate.
