Ingredients
  

Salad Ingredients
  • 2 pounds red potatoes washed and cubed
  • 1 cup mayonnaise preferably full-fat
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup celery finely chopped
  • 1 cup red onion finely chopped
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh dill chopped

Method
 

Prepare the Potatoes
  1. Place the cubed red potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until tender but firm. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth.
Combine Ingredients
  1. Once the potatoes are cool, add them to the bowl with the dressing. Add the chopped celery, red onion, and dill. Gently mix until everything is well coated.
Chill and Serve
  1. Cover the potato salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
