Ingredients
  

Sausage
  • 1 pound Italian sausage sweet or spicy, casings removed
Vegetables
  • 2 medium bell peppers sliced (red and green preferred)
  • 1 medium onion sliced
  • 2 cloves garlic minced
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil for cooking

Method
 

Cooking the Sausage
  1. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Sautéing the Vegetables
  1. Add the sliced bell peppers, onion, and minced garlic to the skillet. Stir to combine and cook until the vegetables are tender, about 10-15 minutes.
Seasoning
  1. Sprinkle the oregano, salt, and black pepper over the sausage and peppers. Stir well to combine and cook for an additional 2-3 minutes.
Serving
  1. Serve hot, either on its own or in a hoagie roll for a sausage sandwich.
