Ingredients
  

Sausage
  • 1 lb Italian sausage preferably sweet or mild
Vegetables
  • 2 medium bell peppers sliced (any color)
  • 1 medium onion sliced
  • 2 cloves garlic minced
Seasoning
  • 1 tsp dried oregano
  • 1 tsp red pepper flakes optional
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cooking the Sausage
  1. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned on all sides, about 8-10 minutes.
Adding Vegetables
  1. Remove the sausage from the skillet and set aside. In the same skillet, add the sliced bell peppers, onion, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.
Combining Ingredients
  1. Slice the cooked sausage into bite-sized pieces and return it to the skillet with the vegetables. Add the oregano, red pepper flakes, salt, and black pepper. Stir to combine and cook for an additional 5 minutes.
Serving
  1. Serve hot, either on its own or with crusty bread or over pasta.
