  • 120 grams granulated sugar
  • 120 grams all-purpose flour sifted
  • 1 teaspoon vanilla extract optional
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk the eggs and sugar together until the mixture is pale and fluffy.
  3. Add the vanilla extract and salt, and continue whisking until well combined.
  4. Gently fold in the sifted flour using a spatula, being careful not to deflate the mixture.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
