Crust
  • 1.5 cups Graham Cracker Crumbs Finely crushed for a smoother crust
  • 0.33 cups Unsalted Butter Melted
  • 0.25 cups Granulated Sugar
Filling
  • 16 ounces Cream Cheese Room temperature
  • 0.75 cups Granulated Sugar
  • 2 large Eggs Room temperature
  • 1 teaspoon Vanilla Extract Pure
  • 1 cup Fresh Strawberries Diced
  • 0.5 cups Sour Cream Full-fat
  • 0.25 cups Powdered Sugar For dusting

Method
 

Prepare the crust
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a greased 9x9-inch baking dish.
Make the cheesecake filling
  1. In another bowl, beat together cream cheese until smooth. Gradually add in sugar and mix well. Add eggs one at a time, mixing thoroughly after each addition. Fold in vanilla extract.
Add the strawberries
  1. Gently fold in diced fresh strawberries into the cheesecake batter, being careful not to overmix.
Bake the bars
  1. Pour the cheesecake mixture over the crust and bake in the preheated oven for about 30 minutes, or until set.
