Ingredients
  

Main Ingredients
  • 3-4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Fresh Corn sweet, juicy corn on the cob
  • 1/2 cup Cilantro chopped
  • 1/2 cup Mayonnaise real mayonnaise
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Chili Powder adjust based on heat preference
  • to taste Salt and Pepper season to taste
  • 2 cups Cooked Rice jasmine or basmati recommended
  • 1/2 cup Queso Fresco or Feta Cheese crumbled
  • 1 piece Avocado optional, sliced

Method
 

Prep the Ingredients
  1. Gather all ingredients. Chop one red bell pepper, mince a clove of garlic, and slice green onions. Rinse and drain one can of black beans.
Cook the Chicken
  1. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add diced chicken breast seasoned with salt and pepper. Sauté for 5-7 minutes until golden brown and fully cooked through.
Prepare the Street Corn Mix
  1. In another bowl, combine one cup of sweet corn, half a cup of crumbled feta cheese, chopped cilantro, lime juice, and a pinch of chili powder.
