Method
Prepare the filling
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add onion and garlic to the skillet, cooking until softened.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
Prepare the peppers
- Cut the tops off the bell peppers and remove the seeds.
- Stuff each pepper with the beef and rice mixture, packing it down gently.
- Place the stuffed peppers upright in a baking dish.
Bake
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 5-10 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
