Ingredients
  

For the Tuna Marinade
  • 1 lb sushi-grade tuna cut into cubes
  • 3 tbsp soy sauce low sodium preferred
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey optional
  • 1 tsp sriracha optional for spice
For the Bowl
  • 2 cups cooked sushi rice prepared according to package instructions
  • 1 cup edamame shelled and cooked
  • 1 cup cucumber thinly sliced
  • 1 cup carrot shredded
  • 1 avocado sliced
  • 1 tbsp sesame seeds for garnish
  • 2 green onions sliced for garnish

Method
 

Prepare the Tuna
  1. In a mixing bowl, combine the soy sauce, sesame oil, rice vinegar, honey, and sriracha. Add the cubed tuna and gently toss to coat. Let marinate for 10 minutes.
Assemble the Bowl
  1. Divide the cooked sushi rice among four bowls.
  2. Top each bowl with the marinated tuna, edamame, cucumber, carrot, and avocado.
  3. Sprinkle with sesame seeds and sliced green onions before serving.
