Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts diced
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Rice
  • 1 cup brown rice cooked
Toppings
  • 1 cup black beans cooked
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup cheddar cheese shredded
  • 1 avocado sliced
  • 1 lime juiced
  • 1 tablespoon cilantro chopped

Method
 

Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Add diced chicken and season with chili powder, cumin, garlic powder, salt, and black pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
Prepare the Rice
  1. While the chicken is cooking, prepare the brown rice according to package instructions.
Assemble the Bowl
  1. In a large mixing bowl, combine the cooked rice, black beans, corn, cherry tomatoes, and cooked chicken. Squeeze lime juice over the mixture and toss to combine.
  2. Serve the mixture in bowls and top with shredded lettuce, cheddar cheese, sliced avocado, and chopped cilantro.
